Mexican Street Corn Deviled Eggs

Recipe from Deviled Eggs: 30+ Recipes for Picnics, BBQ’s, Holidays, Parties, and Everyday Snacks

Prep: 10 min  Servings: 6

Ingredients

6 large hard-boiled eggs, peeled and halved

3 oz prepared Mexican street corn dip

2 Tbs mayonnaise

2 tsp freshly squeezed lime juice, or to taste

1 Tbs crumbled cotija cheese, divided

1 Tbs slivered red onion

2 tsp chopped cilantro

1 tsp chili-lime seasoning, such as Tajin® Clásico Seasoning

Directions

• In a bowl, add the egg yolks and mash with a fork. Add the Mexican street corn dip, mayonnaise, and lime juice and mash with the yolks until smooth. Add 2 tsp of the cotija cheese and stir to mix well.
• Spoon yolk mixture into the egg white halves and sprinkle with remaining cotija cheese, onion slivers, cilantro, and chili-lime seasoning.
• Refrigerate until ready to serve.
