Texas Salmon Burgers

Ingredients
1 (14.75 ounce) can salmon
2 Tbs butter
1 medium onion, chopped
2/3 cup cracker crumbs
2 eggs, beaten
1/4 cup fresh parsley, chopped
½ tsp Tex-Mex seasoning, or to taste
Red pepper flakes, to taste
3 Tbs butter
Variations:
- Spice this recipe up with minced jalapenos or a small can of green chile peppers
- Serve with your favorite hot sauce
Directions
- Drain the salmon, and reserve the liquid. Flake the meat.
- In a large skillet, melt 2 Tbs butter over medium-high heat.
- Sautee onion until tender.
- In a medium bowl, combine the onion with 1/3 of the cracker crumbs, eggs, parsley, Tex-Mex seasoning, red pepper flakes, salmon and just enough of the reserved liquid needed for the mixture to stick together until well blended.
- Refrigerate the mixture, covered, for 30 minutes to overnight.
- Shape into six patties. Coat patties in remaining cracker crumbs.
- Melt the remaining 3 Tbs butter in the skillet over medium heat.
- Cook patties until browned on both sides.
