Sardines Mexican Ceviche Style

Recipe from 50 MORE Ways to Eat Canned Sardines: . . . a recipe journal

Ingredients

Splash of lemon juice

1 jalapeno, diced

1 sprig cilantro, chopped

1 green onion

1 red onion

1 tomato

1 cucumber, diced

Salt and pepper, to taste

1 can sardines in water, drained

Corn tortillas

Olive oil

Hot sauce

Directions

  • In a bowl, mix the lemon juice, jalapeno, cilantro, green onion, red onion, tomato, cucumber, sardines, salt, and pepper.
  • Place in the refrigerator for 2 hours to marinate.
  • Fry the corn tortillas in the olive oil.
  • Serve the ceviche on tortillas with hot sauce.
