Quick and Easy Black Bean and Salsa Soup

Recipe from Winter Soups and Stews: 50+ Heartwarming and Soul-Satisfying Recipes

Prep: 10 min  Cook: 10 min  Servings: 4

Ingredients

2 (15 oz) cans black beans, drained and rinsed

1 ½ cups vegetable broth

1 cup chunky salsa

2 tsp ground cumin

1 tsp garlic, minced

½ fresh jalapeno pepper, chopped

3 tsp lime juice

4 Tbs sour cream

2 Tbs thinly sliced green onion

Directions

• In a food processor or blender, combine the beans, broth, salsa, cumin, garlic, jalapeno, and lime juice and blend until smooth.
• Pour the bean mixture into a saucepan and bring to medium heat. Cook until thoroughly heated through.
• Ladle into soup bowls and top with sour cream and green onion, serve with quesadillas.
