Deviled Eggs with Candied Red Jalapeño Pepper Rings

Recipe from Deviled Eggs: 30+ Recipes for Picnics, BBQ’s, Holidays, Parties, and Everyday Snacks

Prep: 20 min  Servings: 12

Ingredients

12 large hard-boiled eggs, peeled and halved

3 Tbs white sugar

3 Tbs water

1 red jalapeno pepper, sliced into thin rings

2 Tbs cream cheese

⅓ cup mayonnaise

½ tsp Sriracha, or to taste

2 tsp Dijon mustard

1 Tbs rice vinegar

Salt and ground black pepper, to taste

¼ cup chopped chives

Paprika

Directions

  • Slice the red jalapeno into thin rings and place in a bowl. Set aside.
  • Make the candied jalapeno rings: In a saucepan, add the sugar and water to make the simple syrup and bring to a boil. Pour the syrup over the pepper rings and stir to cover. Set aside for 10-15 minutes to soften.
  • Make the yolk mixture: In a bowl, add the egg yolks and mash with a fork. Add the cream cheese, mayonnaise, Sriracha sauce, and Dijon mustard and stir to combine well. Stir in the rice vinegar until smooth and season with salt and pepper to taste.
  • Spoon the yolk mixture into the egg white halves and top each egg with a candied jalapeno ring, chopped chives, and a sprinkle of paprika.
  • Refrigerate until ready to serve.

Tip!

Use the leftover jalapeno-infused simple syrup in a margarita for a kick!

You can also boil the jalapeno rings in with the simple syrup for 1-2 minutes to reduce the heat of the pepper, if desired.
