Turkey Leftovers Casserole with Herbed Stuffing and Mashed Potatoes

Ingredients
3 Tbs butter
2 Tbs all-purpose flour
1 (12 fluid oz) can evaporated milk
1 cup water
¼ tsp salt
¼ tsp freshly ground black pepper
¼ tsp onion powder
2 Tbs butter
1 cup finely crushed herb-seasoned dry bread stuffing mix
1 cup cooked turkey meat, diced
1 cup Cheddar cheese, shredded
2 cups leftover mashed potatoes
Directions
- Preheat oven to 350°F. Lightly grease a 9×13” casserole dish and set aside.
- Make the sauce: In a saucepan over low heat, melt the 3 Tbs butter and then whisk in the flour. Slowly whisk in the evaporated milk and water. Season with salt, pepper, and onion powder and continue stirring over low heat for 5 minutes.
- Make the stuffing: In a separate saucepan, melt 2 Tbs butter over low heat. Stir in the dry stuffing mix.
- Put it all together: In the casserole dish, place the turkey meat on the bottom, then pour the sauce on top. Sprinkle the cheese over the sauce. Spread the mashed potatoes over the layer of cheese, then add the stuffing mixture.
- Bake for 45 minutes and serve.
Tip!
Instead of making the sauce, you can substitute leftover gravy!
