Sweet Coconut Macaroons

Recipe from 3-Ingredient Cookies: 30 Tasty and Easy to Make Recipes for Any Occasion

Prep: 10 minĀ  Cook: 20 minĀ  Makes: 32 cookies

Ingredients:

2 1/2 cups sweetened shredded coconut

3/4 cup all-purpose flour

1/8 tsp salt

1 can (14 ounces) sweetened condensed milk

1 1/2 tsp almond extract

Directions:

  • Preheat oven to 300 F. Lightly grease baking sheet and set aside.
  • In a mixing bowl, toss the coconut, flour, and salt together. Stir in milk and almond extract until blended. It should be sticky and thick.
  • Drop by Tablespoons 3 inches apart on the baking sheet.
    Bake 18-22 minutes until golden brown. Do not overbake or they will dry out.
  • Remove from oven and cool 2 minutes and then transfer to wire rack to completely cool.

Variations:

  • Add finely chopped fruit in the batter.
  • Melt chocolate chips to make a chocolate dipping sauce for the cookies.
  • Add just a touch of honey if you use unsweetened coconut flakes.
