Squash Casserole with Sharp Cheddar Cheese and Cracker Crumbs

Squash Casserole with Sharp Cheddar Cheese and Cracker Crumbs
Recipe from Favorite Side Dishes for Thanksgiving—It’s Not All About the Turkey!

Ingredients
1 lb. yellow squash, sliced
2 eggs
1/2 stick butter, softened
1/2 cup sharp cheddar, grated (or more, as desired)
Salt & pepper to taste
Ritz cracker crumbs (10 or more, crushed)
1 cup milk
Directions
- Preheat oven to 350°F. Grease a 9×9” baking dish and set aside.
- Cook the squash: In a saucepan, add the squash and enough water to cover. Bring to a boil and then reduce to medium-low, cover, and cook until tender, about 15 minutes.
- Using a fork, mash up the squash, and then drain well.
- In a bowl, add the remaining ingredients and stir in the squash, combining well.
- Pour into the baking dish and add more grated cheese on top, if desired.
- Bake for 30-40 minutes. Serve.
