Salmon Cakes with Capers

Ingredients:
1 (14.75 ounce) can red salmon, drained and flaked
2 eggs
1/2 lemon, juiced
1 Tbs capers, chopped
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp cayenne pepper
12 saltine crackers, crushed by hand
1 Tbs bread crumbs, or as needed
1 Tbs butter
1 Tbs olive oil
Directions:
- In a bowl, stir salmon, eggs, lemon juice, capers, salt, black pepper, and cayenne pepper together, until well-combined.
- Mix the crushed saltine crackers into the mixture and mix well.
- Cover the bowl and refrigerate the mixture 30 minutes to overnight.
- Shape the mixture into 4 patties.
- Dust both sides of the patties with the bread crumbs.
- In a large skillet, melt butter and oil over medium heat.
- Fry the patties until cooked and heated through, about 5 minutes per side.
