Keto Beef Liver and Onions with Mushrooms and Bacon

Prep: 15 minutes Cook: 20 minutes
1 lb. beef liver, cut in ½ -inch thick strips
1 cup milk
2 ½ cups mushrooms, sliced
½ cup beef bone broth
¼ cup dry white wine
¼ cup arrowroot starch (or flour)
1 onion, thinly sliced
5 slices smoked bacon
2 Tbs fresh thyme, chopped
½ tsp pink Himalayan salt
½ tsp black pepper
2-3 Tbs butter
In a bowl, place liver strips and cover with milk to soak for 1-2 hours.
Cook the bacon: In a skillet, fry the bacon until crispy. Transfer to a warm platter.
Cook liver: In a bowl, combine the arrowroot starch (or flour), salt, and pepper.
Pour off milk from liver and dry the liver strips on a paper towel.
Coat the liver pieces with the arrowroot and then fry in the bacon fat for 1 minute per side. Transfer to a platter.
Cook the onions: Melt the butter and sauté the mushrooms and onions until the onions are soft.
Stir in the fresh thyme and cook for another minute or two. Remove the onions and mushrooms to the platter with the liver.
Make the gravy: Add the beef stock and the wine to the skillet on medium heat, and let it deglaze until the liquid is reduced to a thick sauce.
Return the bacon, liver, onions, and mushrooms back to the skillet and heat through.
Serve with your favorite sides.
