Healing Winter Cabbage Soup

Ingredients
3 Tbs olive oil
1 large onion, chopped
4 cloves garlic, chopped
2 quarts chicken broth
4 tsp chicken bouillon granules
1 tsp salt, or to taste
½ tsp black pepper, or to taste
½ head cabbage, cored and coarsely chopped
1 (14.5 oz) can Italian-style stewed tomatoes, drained and diced
Directions
- In a large stockpot over medium heat, heat the olive oil and sauté the onion and garlic until soft, about 5 minutes.
- Add the broth, bouillon, salt, and pepper and bring to a boil. Stir in the cabbage and reduce to a simmer until cabbage wilts, about 10 minutes.
- Add the tomatoes and return to a boil. Reduce to a simmer and cook 15 to 30 minutes, stirring often.
Tip!
This soup is healing for when you have a cold or the flu, or certain digestive conditions. You can add your favorite healing spices like chili paste, cayenne, or hot peppers, if desired. To make a heartier soup, add more veggies like celery, carrots, etc., or a meat like chicken or ground beef!
