Ham and Bean Soup Recipe

Ham and Bean Soup

Recipe from Winter Soups and Stews: 50+ Heartwarming and Soul-Satisfying Recipes

Prep: 15 min  Cook: 1 hr 30 min  Servings: 8

Ingredients

8 cups water

1 lb. dry great northern beans, sorted and rinsed

½ tsp salt

1 cup carrots, chopped

1 cup onion, chopped

½ cup celery, chopped

1 tsp garlic, minced

1 tsp mustard powder

2 bay leaves

1 ham hock

2 cups ham, chopped

½ tsp salt

½ tsp ground white pepper, or to taste

Directions

  • Soak the beans: In a large pot, add the water and beans and soak overnight, covered.
  • Cook: Drain the water off the beans and rinse. Add fresh water and cook on a simmer for 2 hours.
  • Add the carrots, onion, celery, garlic, mustard, and bay leaves. Stir well.
  • Add the ham hock to the pot and bring to a boil. Reduce heat to low and simmer for 1 hour, or until beans are soft and tender.
  • Remove ham hock and discard.
  • Add the chopped ham and continue to simmer until heated through, about 30 minutes.
  • Remove bay leaves and discard.
  • Season with the salt and white pepper to taste.
  • If soup needs thickening, take 1 cup of the beans and puree, then stir back into the soup.
