Grilled Beef Liver with Mushrooms and Onions

Ingredients
3 cups mushrooms, sliced
1 onion, sliced
3 Tbs balsamic vinegar
1 Tbs butter, melted
½ tsp dried sage, crumbled
½ tsp salt
½ tsp pepper
1 tsp Dijon mustard
1 lb. calf liver, thinly sliced
1 lb. beef liver, thinly sliced
1 Tbs cooking oil
2 Tbs fresh parsley, minced
Directions
- Preheat the grill.
- Grill the veggies: Cut a 16-inch piece of heavy-duty foil and arrange the mushrooms and onion on one half of it.
- Drizzle 1 Tbs of the balsamic vinegar and the melted butter over the mushrooms and onion.
- Finish with the sage and salt and pepper over the top and then fold the sides of the foil to form a packet.
- Grill over medium heat, until tender, turning once, about 10 minutes.
- Grill the liver: In a bowl, combine the remaining vinegar and mustard, set aside.
- Pat the liver dry with a paper towel, and then brush with the oil and sprinkle with salt and pepper.
- Place on the greased grill and cook for 2 minutes.
- Turn, and brush with half of the vinegar mixture and grill for 2 minutes.
- Turn again, and brush with remaining vinegar mixture until glazed and browned on both sides, leaving it pink on the inside, about 1 minute.
- Serve with the mushrooms and onions, and sprinkle with the parsley.
