Easy Slow Cooker Beef Stew

Ingredients
3 lbs. cubed beef stew meat
¼ cup all-purpose flour
½ tsp salt, or to taste
3 Tbs olive oil
3 Tbs butter
3 onions, sliced
¼ cup red wine
4 large potatoes, cubed
1 cup baby carrots
1 Tbs dried parsley
1 tsp ground black pepper
1 Tbs Worcestershire sauce
2 cups boiling water (or beef broth)
1 (1 oz) package dry onion soup mix
¼ cup warm water
2 Tbs all-purpose flour
Directions
- In a large bowl, add ¼ cup flour with salt and combine well. Add the meat and coat with the flour.
- In a large skillet over medium-high heat, add the olive oil and the floured meat and brown evenly. Transfer the meat to the slow cooker.
- In the skillet over medium heat, melt the butter and add the onions. Sauté until softened, about 5 minutes. Transfer the onions to the slow cooker.
- Add the red wine into the skillet over medium heat and stir to loosen the bits of food. Remove from heat and add to the slow cooker.
- To the slow cooker, add the potatoes, carrots, parsley, pepper, and Worcestershire sauce.
- In a small bowl, stir in 2 cups boiling water (or beef broth) and the dry soup mix and combine well. Pour into the slow cooker.
- Cook on High, covered, for 30 minutes, then reduce to Low and cook for 6 hours until meat is fork tender.
- In a small bowl, add ¼ cup warm water and 2 Tbs flour, mixing well. Stir the slurry into the stew and cook until thickened, uncovered, about 15 minutes.
- Serve and enjoy.
