Cranberry and Turkey Salad with Sliced Almonds

Recipe from Turkey Leftovers—20 Delicious Recipes for Thanksgiving Leftovers

Prep: 10 min  Cook: 0 min  Servings: 4

Ingredients

3 Tbs cranberry sauce

¼ wedge lemon juice

4 Tbs mayonnaise

Dash of dry mustard

3 cups cooked turkey, chopped

½ cup dried cranberries

½ cup sliced almonds

2 stalks celery, chopped

2 Tbs sweet onion, chopped

Sunflower kernels, as desired

Directions

  • Make the sauce: In a bowl, stir and thoroughly combine the cranberry sauce, lemon juice, mayonnaise, and dry mustard.
  • Make the salad: Add the turkey, dried cranberries, almonds, celery, sweet onion, and sunflower kernels to a bowl.
  • Add the sauce and stir in.
  • Serve on a croissant, on bread, or in a pita pocket.
