Cinnamon and Pineapple Bread Stuffing

Cinnamon and Pineapple Bread Stuffing
Recipe from Best Dressing and Stuffing Recipes: Not Just for Thanksgiving!

Ingredients
½ cup brown sugar
½ cup butter, softened
4 large eggs
1 (20-ounce) can crushed pineapple, drained (reserve)
5 slices white bread, cubed
Cinnamon or pumpkin spice
Directions
- Preheat oven to 350°F. Butter a 9” baking dish and set aside.
- In a large bowl, add the brown sugar and softened butter and beat with an electric mixer until smooth and creamy.
- Beat the eggs in one at a time.
- Stir in the crushed pineapple and bread cubes, and a little reserved pineapple juice, if desired.
- Pour into the baking dish, sprinkle cinnamon (or pumpkin spice) on top, cover with foil, and bake for 30 minutes. Uncover and bake for 20 to 30 minutes, or until golden brown.
- Let stand for a few minutes, then serve.
Tip!
Double the recipe for a 9×13” casserole dish. An excellent stuffing to go with ham!
Add leftover ham and sautéed onions to the mixture before baking for a savory and sweet casserole.
