Butterscotch Steamer
Recipe from Cozy Winter Teas and Drinks: Tea, Cider, Hot Chocolate, Lattes, Cold/Flu Teas & More
Prep: 3 min Cook: 10 min Serves: 2
Ingredients
1/3 cup brown sugar, lightly packed
1/4 tsp salt
Splash of water
2 Tbs unsalted butter
2 cups whole milk
1 1/2 tsp vanilla extract
Directions
- In a saucepan, add the sugar, salt, and a splash of water and bring to medium to medium-high heat. Make sure that the sugar is moistened evenly. The water helps it dissolve evenly.
- When the mixture starts to bubble, continue to cook for 4 to 5 more minutes. Watch closely so that the sugar does not burn, turning down the heat if necessary. The mixture should be nice and dark brown.
- Remove from heat. Add the butter, being careful as it will sputter. Stir thoroughly to fully mix. It should resemble a caramel sauce.
- Slowly add the milk. The caramel mixture will begin to harden, but will re-melt as the milk heats up.
- Put the saucepan back over medium/low heat and heat slowly. Stir constantly until the mixture is steaming and all of the caramel has melted into the milk. Do not let the milk come to a boil.
- Remove from heat. Stir in the vanilla extract and serve immediately, topped with frothed milk, whipped cream, or a dash of cinnamon, if desired.
