Almond Crackle Cookies

These almond crackle cookies are easy to whip up for school or office parties, holidays like Thanksgiving or Christmas, or just when you want a yummy snack! Plus, they are only 3 ingredients! From my new cookbook. Checkout my other cookbooks here.

Almond Crackle Cookies

Recipe from 3-Ingredient Cookies: 30 Tasty and Easy to Make Recipes for Any Occasion

Prep: 30 min  Cook: 20 min  Makes: 20 cookies

Ingredients:

6 Tbs sugar

1 large egg (or 2 egg whites, if desired)

1 1/4 cups sliced almonds (blanched or unblanched)

Directions:

  • Preheat oven to 325 F. Line two baking sheets with parchment paper. Set aside with a small cookie scoop or teaspoon.
  • In a mixing bowl, whisk together the sugar and egg (or egg whites) until well blended, but still thick.
  • Add almonds and whisk until well coated. Use the batter quickly. If it sits it will separate. Give the batter a stir in between spooning it out onto the baking sheet.
  • Use 2 teaspoons batter to make each cookie. Place on the baking sheets 2 inches apart. Flatten each cookie with the back of a fork.
  • Bake 20 minutes—but rotate the pans halfway through baking.
  • When done, the cookies will be dry, crackled on top, and beige in color.
  • Remove from oven and transfer the baking sheets to racks. Cool for 10 minutes.
