3-Ingredient Soft and Chewy Gluten Free Oatmeal Cookies

Prep: 15 min Cook: 10-15 min Makes: 14 (2-inch) cookies
Ingredients:
½ cup smooth peanut butter
½ cup maple syrup
1 ½ cups quick-cooking oats
Directions:
- Preheat oven to 350 F. Place the rack in the middle of the oven.
- Line a baking sheet with parchment paper.
- In a mixing bowl, place the peanut butter and maple syrup and using a spatula, mix until well combined. Add the oats and any optional mix-ins as desired until well combined and the oats are wet.
- Spoon out the cookie dough into 2-Tablespoon portions (about 14-15) and space them 1 inch apart on the baking sheet.
- Flatten each ball of dough with your fingertips (lightly wet your fingertips with water to prevent sticky dough from sticking to your hands) until they are 2 inches wide and 1/2-inch thick. (These cookies do not spread when cooking).
- Bake 5 minutes and then rotate the cooking sheet front to back.
- Continue baking for 5 – 10 more minutes until they start to turn brown and the edges are set.
- Remove from oven and let cookies cool for 5 minutes, then transfer to a wire rack to cool completely.
*Note: You can substitute almond butter or sunflower seed butter for the peanut butter and honey for the maple syrup.
Variations:
- 1 tsp ground cinnamon
- ¼ mini or regular chocolate chips
- ¼ cup raisins or other dried fruit
- Dip the cooled cookies in melted chocolate.
