3-Ingredient Shortbread Cookies

Prep: 10 min Cook: 16-18 min Makes: 15 cookies
Ingredients:
1 cup butter, softened
½ cup powdered sugar (*see Note below)
2 cups all-purpose flour
Directions:
- Preheat oven to 350F. Line two large baking sheets with parchment paper.
- In a large mixing bowl, cream together the butter and sugar with a mixer.
- Add the flour. Continue to mix from the crumbly stage until it forms a soft dough. Form the dough into a ball with your hands.
- On a clean surface dusted with powdered sugar, roll out the dough 1/4 -inch thick with a dusted rolling pin.
- Cut the dough into rounds and place on the baking sheets.
- Bake for 16-18 minutes. Cookies are done when they are pale golden brown.
- Let cool completely, then remove from the baking sheets.
*Note: you can make powdered sugar from granulated sugar. Add ½ cup of sugar to a blender and pulse on high speed until the sugar is completely powdered. This makes 1 cup of powdered sugar.
