3-Ingredient Chocolate Peppermint Cookies (Homemade Thin Mints)

3-Ingredient Chocolate Peppermint Cookies (Homemade Thin Mints)

Recipe from 3-Ingredient Cookies: 30 Tasty and Easy to Make Recipes for Any Occasion

Prep: 20 min  Makes: 16 cookies

Ingredients:

16 chocolate wafer cookies or 8 Oreos

1 cup semi-sweet chocolate chips

¼ teaspoon pure peppermint extract, or more to taste

Directions:

  • Line a baking sheet with parchment paper and set aside.
  • Set out 16 chocolate wafer cookies.
  • OR – if using Oreos, twist the 8 cookies apart (to make 16) and scrape out the cream filling. Discard the filling or eat it, as it won’t be used for the cookies.
  • Set the cookies aside.
  • In a saucepan or pot, heat water to simmer and set a heat-proof bowl over the pot. Pour the chocolate chips into the bowl and stir with a rubber spatula until completely melted. When the chocolate sauce is smooth and glossy, stir in the peppermint extract. Start with ¼ tsp and taste. If you want more, add 1 drop at a time until you reach the amount you prefer.
  • Keeping the bowl of chocolate over the simmering water, dip one cookie in at a time with a fork, coating all sides.
  • Tap the cookie on the side of the bowl to drain off extra chocolate and then place on the baking sheet. Add garnishes now, if desired.
  • When all the cookies are done and on the baking sheet, transfer to the refrigerator to cool.

Garnishes:

  • Crushed Oreos or candy canes
  • Mini chocolate chips
